This time of year I'm pretty sure is the most IN-SANE time of year for everyone. We are no exception. Jon's been working like crazy and mostly out of town. That means I've been a single mama for a while now, and I have some serious respect for parents who are actually single parents all the time.

It takes a lot of strength, patience, and caffeine to make it all happen* without the entire house falling down. 


*Also, it takes wine.

Before Jon left, we went and had one last big, family meal at El Tiempo in Vintage Park. If you've never been there, you're missing out! 



The wait staff couldn't believe how content Corey was the whole time. Honestly, as long as the kid has food in front of him, we're golden.


Two weekends ago, we had a little party to celebrate my 21st birthday (okay, my 30th) and to celebrate our big move to Houston. We saw so many wonderful friends that I already miss so, so much. We have such a great group in D-Town and look forward to some great visits!

 Oh this guy. He's kept me grounded these past few months in the middle of a crazy move and a teething baby. 


A little election humor. I feel like we could use some light-heartedness no matter who you're voting for. 


I can't even. 


 Cooking is definitely my therapy, so I decided to try my hand at making homemade chicken stock. I used Barefoot Contessa's recipe and it was FABULOUS! So easy and the house smelled friggin' amazing. Out of this one batch, I got 7 quarts of stock and 3 quarts of shredded chicken I can use in other things. I froze all of it! 


Penny was less than thrilled about her Halloween costume. 


We finally got some rugs in the living room, kitchen, and kitchen nook! I love them! Plus they were a great price! I love this little tranquil scene here. I enjoyed it for approximately 14 minutes. After I took this picture, I took Corey and Osa for a walk. Penny decided to pee on the BRAND NEW RUG immediately after we left to express her displeasure at being left behind.

I tried a new [gag] salad because I'm trying to do the healthy thing for lunch. It was cheap, easy, healthy, and delicious so I can't complain too much. Except that it was still a salad. Did I mention I hate salad? 

All it takes its: spring mix, roasted brussels sprouts [HEB sells them already roasted and ready], bacon bits, shredded cheese [I used Gouda], green apple, and I used a caper vinaigrette. It would also be delish with blue cheese dressing.
